Introduction
Our Client, a leader in Hospitality Industry, seeks to appoint an experienced Head Chef. Applicants need to reside in and around the Cape Town area only.
Duties & Responsibilities
- Ensure all food is prepared as per food preparation requirements.
- Ensure meals are produced on time, and sufficient quantities are available for the various areas.
- Ensure costs are controlled to maintain the correct levels of spending.
- Ensure catering staff have a safe working environment at all times.
- Ensure any staffing issues are resolved fairly and quickly.
- Ensure wastage is minimised by careful supervision of food preparation methods.
- Ensure that fridge and or freezer and food temperatures are tested and recorded daily.
- Ensure all staff know their duties and what is expected of them.
- Ensure proper hygienic storage methods are utilised to prevent food loss.
- Draw up various menus which incorporate choices and are balanced and suitable to special diets, such as low fat, diabetic, or those as a result of religious beliefs.
- Control stocks and purchases by allocating the quantity of materials.
- Maintain stock levels of all kitchen supplies.
- Prepare daily pastry and bakery requirements as per the menu.
- Be available for functions to ensure the food is prepared and served as required.
- Monitor kitchen staff to ensure all tasks are done as required.
- Delegate duties to the kitchen staff as per the menu requirements.
- Give staff feedback on their performance to enable staff development.
- Assist the Catering Manager when required.
Desired Experience & Qualification
- Matric (Grade 12) Certificate or equivalent qualification.
- At least 3 (Three) years of experience in a similar capacity.
- Proven work experience as Head or Group Chef or in a similar role.
- Must communicate clearly with Managers, kitchen, dining room personnel, and guests.
- Must be very high profile and function-orientated.
- Must be innovative and creative with function menus.
- Be good with admin costings and quoting.
- Must have own vehicle.
- No criminal record.
